Vinifikation The use of whole grapes or whole bunches during fermentation is a much-discussed topic, as it plays an important role in the overall taste and aromatic composition of the finished wine. In addition to the desired style, the ripeness and health of the grapes determine the proportion of whole bunches used, with 20% of this vintage remaining on the stems. After an average maceration period of 21 days, the wines were gently pressed and aged for 11 months in French oak barrels.
