Vinifikation Diemersdal's "Private Collection" is a classic Bordeaux blend. The vines grow on red, relatively heavy "Hutton" clay soils and are between 18 and 29 years old. The individual grape varieties were harvested at their optimal ripeness and vinified separately. Alcoholic fermentation took place for 5-7 days at between 24°C and 28°C with regular bâtonnage. After malolactic fermentation, the Private Collection was aged for 22 months in 40% new 225-liter French barriques.
