Vinifikation The Lismore Estate Vineyards winery in Greyton, Overberg, was founded in 2000 by California-born Samantha O'Keefe. The estate's location offers a combination of cool winter weather and hot African summers, which produce Lismore's "rich, complex, and lovingly handcrafted" wines. Lismore wines had their big breakthrough in 2012, when the Lismore Chardonnay and Viognier were each awarded 92 points by Neal Martin (of Robert Parker's Wine Advocate), leading to international success. The grapes were fermented 50% as whole bunches in a 5,000-liter wooden fermentation vessel, with the entire process accompanied by gentle racking. This process allowed for a long extraction time, which supports the fruity expression of this wine. The wine was left on the skins for a 30-day extended maceration and then pressed in a traditional basket press. Maturation took place for 10 months in 500-liter barrels (35% new). Time in the bottle will allow for integration, the deepening of flavors, and the full expression of the fruit.
