Vinifikation Webb Ellis bridges the path to the future by incorporating the past, the present, and the future. The wine is symbolic of the exchange of knowledge and wisdom from generation to generation, combining traditional methods with new techniques and embodying a spirit of innovation, open-mindedness, and mutual respect. It is finesse and integrity. Fermentation was initiated in stainless steel fermenters and underwent a series of pump-overs. Further maceration followed before racking and pressing. This wine spent 20 months in French oak barrels: 80% in first-fill barrels, the remainder in second- and third-fill barrels. Bottling date: December 2013.
