Aromas of iron filings —electric and vibrant—bright cassis, rich dark plum, dried herbs (rosemary, bay leaf) and cedar spice flow onto an outrageously opulent palate. Red cherries, juicy blackcurrant and the flesh of ripe plums are enveloped in a sensation of crushed velvet. The tannins are complementary in their contrast, firm and muscular yet somehow weightless; quite a feat.

Vinifikation
Our Damascene Stellenbosch Cabernet Sauvignon vineyards (a combination of CS337 and CS46 clones) were planted as early as 2001. Intense care is taken to keep the vineyards virus-free. These vineyards are spread across the Bottelary and Polkadraai Hills stations, 14-20 km from the Atlantic Ocean, as well as the north-eastern slopes of the Helderberg. All these sites are granitic outcrops, lending purity and brightness to the wine. The Polkadraai Hills vineyard has an extended laterite layer below the decomposed granitic topsoil, contributing to a more structured component. This site, being on a south-easterly slope, always has a longer ripening period to ensure optimal phenolic ripeness and the highest concentration of tannins to enhance the wine's structure. The Bottelary slopes site has more structured gravelly soils with a higher clay content in the subsoil to broaden the final product. This site faces Table Mountain to the west. The Helderberg granitic slopes vineyard faces north-east, lifting fruit intensity and length. Extremely low yields and smaller berries with very thick skins contribute to high concentration and great structure at moderate alcohol levels. A series of lots were hand-harvested between March 20th and 22nd, 2021, at 24.9-25.9 °Oechsle. Smaller open-top tanks were used for primary fermentation, with pump-overs 2-3 times per day. Once spontaneous fermentation began, pump-downs were performed as needed. Fermentation temperatures peaked at 28°C. Spontaneous malolactic conversion and maturation occur in new French oak barriques and 1000-liter foudres. The wine spends 22 months in oak to gradually improve the clarity and stability of the wine and avoid the need for fining. The wine is racked twice, once after 12 months and again two weeks before bottling.
