Vinifikation The winter was cold and wet, which helped the soil store enough moisture after the drought. Although we had a cool spring, we still had good budburst. Weather fluctuations during flowering and fruit set led to loose, uneven bunches with small berries. Ripening started earlier than usual and there were cool conditions during the growing season. At the beginning of February, we experienced intense heat, which accelerated the harvest of the early varieties. The harvest was challenging with wet conditions from late February into March, which meant we had a long 3-week break in harvesting, increasing the ripening time for us. The harvest was smaller than in previous years, but of high quality. The grapes were whole bunch pressed. The juice was transferred to new and second use 500L blonde toasted barrels after a short settling period. It was naturally fermented at varying temperatures and then left on its lees for 10 months.
