Vinifikation The use of whole bunches during fermentation is a much-debated topic, as it plays a significant role in the overall aromatic profile of the resulting wine. In addition to the desired style, the ripeness and health of the grapes also play a decisive role, with 20% of this vintage not being destemmed. After an average maceration period of 21 days, the wines were gently pressed and matured for 11 months in French oak barrels. Bottled in June 2021.
