Vinifikation It took almost 10 years for this dream to come true, a dream shaped by the reality of farming in the Swartland, its droughts, and our love for a particular wine, the Elpidios. Diversity and recognition over time, we share this dream with the Swartland, where in 2017 we first made Grenache the leading grape variety in Elpidios. This Grenache Noir-based assemblage was harvested from grapes from 11 different vineyards and in 17 batches. The 2021 vintage again contains a portion of the wine that was fermented and aged in concrete tanks – Grenache, Syrah, and Cinsaut. In addition to the concrete tanks, the wine also matured in old 500L French oak barrels and a 4,100L foudre (Pinotage). The production of Elpidios is similar to Grenache Noir in terms of long, gentle extraction. An average of 40% whole grape clusters are used. After bottling, the wine was aged for 18 months in the bottle before being released onto the market. This vintage is also based on grapes from granite soils of the Paardeberg, blended with structured shale and slate soils from the east, clay soils from the north, and iron-rich soils from the west.
