Vinifikation The Cinsault grape is a classic at the Cape and is currently experiencing a small renaissance. Although it is still rarely found on the label as a single varietal, as it is usually blended with Cabernet Sauvignon without mention or used for Port-like fortified wines, and not infrequently distilled. This very fact is very regrettable, because as a single varietal wine, Cinsault is incredibly enjoyable. Even if it is not easy to control its oxidative character and strong vigor.
