Vinifikation The grapes were hand-picked in the cool season during the early morning. On the sorting table, all excess stems and inferior berries were carefully removed. The grapes were gently destemmed with a Bucher destemmer and lightly crushed. Fermentation took place in 7-ton open-top stainless steel tanks with WE 372 yeast added to the juice. The wines were manually pumped over and punched down 5 times daily to ensure maximum color extraction from the skins. After primary fermentation, the maceration period was 10-16 days before pressing. Each varietal is aged separately in oak barrels (micro-vinified) before being blended and finally bottled. The wine was aged for 20 months in 300-liter French oak barrels, 50% of which were new wood.
