On the palate, it is taut and needs a little time and air to reveal its layers of spicy violet and black berry fruits. A touch of oak provides both spice and structure, while the acidity ensures freshness and piquancy. Zesty, spicy, and savory with a long finish, it will reward patience.

Vinifikation Our 2020 Merlot grapes were carefully hand-picked and placed into lug boxes before being transported to the cellar in refrigerated trucks to preserve their freshness. Upon arrival, the whole berries undergo a thorough double sorting process, including optical sorting, and are gravity-fed into wooden fermenters.Each parcel is cold-soaked for several days before being gradually warmed to allow for natural fermentation. After fermentation, the wine remains on the skins for an extended maceration, followed by a five-day maceration to gain additional depth and colour. The wine then matures for 24 months in 50% new French oak barriques, is bottled unfiltered, and ages for another three years in the bottle.The grapes for this Merlot come mainly from our vineyards in Franschhoek, as well as from selected sites in Groenekloof near Darling.
