Vinifikation The grapes are hand-harvested at 24.5 - 25.0 ° Oechsle. They are cold macerated for two days before being inoculated with yeast. During fermentation, color/flavor extraction is achieved by regular pump-overs every six hours and manually punching down the cap two to three times. A maximum temperature of 27°C is reached. After fermentation is complete, there is a further 14-18 days of skin maceration before the wine is pressed and aged in new 225-liter French oak barrels. Malolactic fermentation is completed in the barrel and maturation takes place over 18 months.
