Product Description:
Straw yellow, with a delicate green tinge and brilliant clarity. Exotic notes combine with ripe white peach and gooseberries. Nuances of stone fruit, citrus peel, and a chalky minerality are also present. The intense aroma seamlessly continues on the palate. Fresh acidity provides a vibrant texture there, while the long lees contact and small proportion of Sémillon emphasize body and richness. Our Sauvignon Blanc is lively and elegant from the first sip. It possesses enormous fruit depth and finishes long and juicy. Exclusively aged in stainless steel tanks, it already presents excellently in its youth, but under ideal cellar conditions, it will continue to develop for another 5 to 8 years.

Vinifikation The grapes for the Constantia Glen Sauvignon Blanc all come from our own vineyards and were harvested manually in the early morning hours. After several hours of cooling, they were destemmed and crushed. We then left different batches on the grape skins for between two and 18 hours before they were drawn off, recombined, pressed, and fermented at a constant 15 degrees Celsius. To find its perfect balance, it then matured for five months on the lees in stainless steel tanks.
