Vinifikation Despite significant difficulties in the preceding drought years, a cooler ripening period, and smaller yields, berries with concentrated flavors and intense color were harvested, resulting in wines of remarkable quality. The grapes were hand-picked in the early morning hours, initiating the first phase of sorting. The different grape varieties were destemmed and fermented as whole berries without crushing, with an extended skin contact of 30 days post-fermentation. Only the wine obtained from a light pressing was then aged for 18 months in 50% new and 50% used French oak barrels, where malolactic fermentation also occurred. Each component of this blend was kept separate until the final blending phase.
