Vinifikation After Donovan Rall has tasted a number of potential old Chenin vineyards on the granite soils of the Paardeberg in recent years, this 2.1-hectare site, planted in the 1960s, immediately stood out. In addition to contributing to the Rall White, a selection from this vineyard is also bottled separately for Noa. The grapes were harvested earlier than the other parcels, fermented and aged in a concrete egg to provide structure to the wine, while remaining in a very fresh and almost primary state until bottling after 10 months.
