Vinifikation Chi means "life force" and Chi stands for CHIUTA (an African rain god). The picturesque location of the vineyard in the fertile Elgin Valley inspired the creation of this fresh, handcrafted Riesling. The grapes are hand-harvested, cooled, then hand-sorted, destemmed, and pressed. Spontaneous fermentation takes place in stainless steel tanks and lasted about 6 weeks until optimal residual sugar levels were reached. The wine was prepared for bottling and bottled after 3 months in the tank, then released after another 2 months in the bottle.
