Vinifikation Cinsault Noir from a 1988 planted, unirrigated bush vine vineyard. Rooted in decomposed granite soils with high quartz content on the cooler southeast slope of the Sinai Hill. Partial whole bunch fermentation with submerged caps. Aged on fine lees for 11 months in older 225-liter and 400-liter barrels. No new oak.
