Product Description:
This wine has a deep, almost black color with purple reflections. The nose reveals notes of purple figs, cigar box, salted licorice, and violet perfume. On the palate, it is elegant and refined, with rich dark fruits and a silky mid-palate. The wine leaves an appealing chalky finish and a subtle hint of red pepper.

Vinifikation
This wine is 100% Shiraz, sourced from a single block of 2 clones. It is terraced in our steepest and rockiest terroir, which is perfectly suited to the varietal and produces our most expressive Syrah. Average yields are 8 t/ha. The grapes were hand-harvested on February 26th and March 8th. Grapes are picked at optimal flavour and phenolic ripeness with sugar levels between 23.4 and 24.9 degrees Brix and acidity of approximately 5.5 g/l. Grapes are hand-picked into small harvest bins and delivered to a cold room, where they are chilled overnight to approximately 6 degrees Celsius. 25% of the grapes were initially added to the tank as whole bunches. The remainder of the grapes were destemmed and gently crushed directly into the tank to undergo fermentation without the use of pumps. A 4-day cold maceration took place before fermentation started spontaneously (without the use of selected yeast strains). Until the completion of fermentation, the tanks were pumped over twice daily, and the cap plunged to extract colour and tannins. Following fermentation, the wine had an extended maceration period, and malolactic fermentation began spontaneously. The Syrah was transferred to barrels to complete malolactic fermentation. After this, the wine was racked, sulphured, and returned to barrels for further maturation. The wine matured on fine lees for 10 months, after which it was transferred to tanks at the time of blending. The wine was then transferred back to barrels for a further 11 months before being bottled unfiltered and unfined in January 2022.
