Vinifikation Cartology parcels are generally dryland bush vine parcels. The minimum age is 35 years old, although most are between 40 to 50 years of age. The average yields for these parcels are around 3 tons/Ha or approximately 20 hl/Ha. The 2022 Cartology is made up of 92% Chenin Blanc and 7% Sémillon. The Chenin is from our parcels in the Skurfberg, Perdeberg, Bottelary, Upper Blaauwklippen, False Bay, and Tygerberg. The Sémillon is from the old La Colline block in Franschhoek. Grapes are hand-sorted and whole bunch pressed. The juice is settled very lightly (we like very cloudy raw juice) with no additions to the raw juice, spontaneous fermentation in either concrete eggs, clay amphorae, foudres, or old barrels (various sizes). Fermentation can take anywhere from 3 weeks to 11 months. The wine is aged on its lees for about 12 months and then racked to tank for a further six months on fine lees before bottling, with no fining.
