Product Description:
The wine has more of a Bordeaux-like, aromatic profile than its Franschhoek counterpart, with blackberry and raspberry fruit infused with cedar and mint scents. The oak is well integrated. On the palate, it is medium-bodied with grainy tannins and plump blackberry and raspberry fruit interlaced with clove and violet notes. The finish is much more "Cape" in style, with fennel and a touch of anise lingering on the aftertaste. This simply shows more personality and complexity than the Franschhoek Cabernet Sauvignon this year.

Vinifikation
The Stellenbosch Cabernet Sauvignon was selected from various plots on the northwestern slopes of the Helderberg. The predominant soil types are a combination of decomposed granite and Table Mountain sandstone. The Cabernet Sauvignon from Helderberg displays minerality and a classic graphite character, resulting from the unique combination of soil type and high altitudes with their specific characteristics. The grapes were cold-macerated in concrete tanks and then fermented at temperatures between 27° and 30° with frequent pump-overs and occasional delestage for better extraction. Malolactic fermentation followed, and the wine matured for 18 months in 60% new French barriques from Sylvain & Saury.
