Vinifikation The Z was created by the combination of a cool climate in the vineyards and the high clay content of the soil, which is suitable for planting Merlot. Affectionately called "Zee," it owes its name to the cooling Zephyr breeze that prevails in the vineyards. The grapes all come from a 22-hectare vineyard in the Polkadraai Hills. The wine was aged in an air-conditioned barrel cellar at 16 °C and 80% humidity. The Malbec matured in 225 L American oak barriques, while the other grape varieties were allowed to age for 12 months in French barriques.
