Vinifikation Each vineyard has its own micro-climate, and vines grow on a variety of soil types. Several clones are represented. All vineyards are trellised on the Perold system and they have managed to maintain a perfect balance between leaf cover and yield. Thanks to the diverse terroirs, each area produces its own distinctive grapes, so the grapes from each area make a unique contribution to taste and structure. The grapes for the wine consist of Merlot (48%), Cabernet Franc (37%), Petit Verdot (5%), and Malbec (10%). Before and after destemming, all grapes were sorted by hand. The destemmed berries were immediately inoculated with yeast. Fermentation took place at a temperature between 25 and 30 degrees Celsius, while the wine was pumped over. After fermentation, the wine was left on the lees for another 20 days to improve extraction and body. Malolactic fermentation took place partially in barrels. The various components are aged separately for 12 months in used 300-liter French oak barrels. Afterwards, the wine is blended, filtered, and bottled.
