Vinifikation A warm, dry vintage with a late start to the growing season resulted in lower tonnages but well-balanced, well-structured wines with beautiful intensity. The grapes were destemmed, hand-sorted, and pumped into stainless steel tanks. The must was inoculated with cultured yeasts, and during fermentation, the wine was pumped over once daily until the desired degree of color and tannin extraction was achieved. After fermentation, the wine is pressed and transferred to barrels for malolactic fermentation. Further aging took place for 18 months, with 51% in new French oak barrels.
