Vinifikation Each component was harvested, destemmed, and fermented in tank separately. The wines spent between 6 and 21 days on the skins, depending on the tannin structure. Pumped over three or four times per day during fermentation. The wine was then pressed to complete malolactic fermentation in tank. The wine was racked into French oak barrels; 18% new, 25% second use, 17% third use, and 40% older oak, for a period of 12 months.
