Product Description:
Concentrated fruit with graphite, sweet baking spice and curry spice with savoury biscuits in the background. It has so many layers of flavour that keep resurfacing like gentle waves. Hint of red roses which gives the wine a little perfume. It is structured, complex and intense. The only wine to spend one year in small barrels and a second year in foudre and so is released a year later than all other Damascene wines. A superb wine which every collector should have.

Vinifikation
Our Damascene Stellenbosch Cabernet Sauvignon vineyards (a combination of CS337 and CS46 clones) were planted as far back as 2001. Intensive care is taken to ensure the vineyards are virus-free. These vineyards are spread across the Bottelary and Polkadraai Hills stations, 14-20 km from the Atlantic Ocean, as well as the north-eastern slopes of the Helderberg. All these sites are granitic outcrops, lending purity and brightness to the wine. The vineyard in the Polkadraai Hills has an extensive laterite layer beneath the decomposed granite topsoil, contributing to a better-structured component. As this site is on a south-eastern slope, it always has a longer ripening period to ensure optimal phenolic ripeness and the highest concentration of tannins to enhance the wine's structure. The site on the Bottelary slopes has more structured gravel soils with a higher clay content in the subsoil to enhance the breadth of the final product. This site faces Table Mountain to the west. The vineyard on the granite slopes of the Helderberg faces north-east, elevating fruit intensity and length. Extremely low yields and smaller berries with very thick skins contribute to high concentration and great structure at moderate alcohol levels. A number of batches were hand-harvested between March 20 and 22, 2021, at 24.9-25.9° Oechsle. Smaller open-top tanks were used for the first fermentation, with pump-overs 2-3 times a day. After the onset of spontaneous fermentation, pump-downs were performed as needed. Fermentation temperatures peaked at 28°C. Spontaneous malolactic conversion and maturation take place for 12 months in 60% new French oak barriques as well as in 2000-liter conical Austrian oak vats. The wine spends 24 months in oak barrels to gradually improve the wine's clarity and stability and avoid the need for fining. The wine is racked twice, once after 12 months and again two weeks before bottling.
