Vinifikation After each individual vine has been separately picked, cooled, sorted, and transferred into various fermentation tanks, fermentation is activated by the addition of a yeast culture. In this case, the yeast is sourced from an organic Stellenbosch vineyard, imparting expression and individuality to each parcel. Following a minimum two-week skin maceration, each batch was pressed and transferred into French oak barrels, 17% of which were new. After almost a year in the barrel, a final blend was achieved through numerous representative tasting samples. This assemblage was transferred to tank and bottled after a three-month resting period.
