Vinifikation
The Merlot vines grow on the warm, north-facing slopes of the Helderberg region within the Stellenbosch appellation. At an altitude of approximately 250 meters above sea level, the cooling influence of the Atlantic Ocean results in beautiful phenolic ripeness. The hand-picked grapes arrive at the cellar in the morning. The grapes are sorted and destemmed. The whole grapes are fermented in both open tanks and barrels. Intermittent pumping over and punch-downs ensure a balance between flavor, color, and tannin extraction from the skins. The fermentation process is closely monitored to ensure that all natural aromas and flavors are preserved and enhanced as needed. After primary fermentation, some batches are left on the skins to extend maceration as required. The batches are pressed and transferred to a combination of old and new oak for maturation. Each batch of Merlot is aged separately in oak barrels (micro-vinified) before being blended and finally bottled. In total, the wine spent 16 months in French oak barrels.
