Vinifikation The farm is situated in the foothills of the Simonsberg in the Paarl region of the Western Cape and comprises a variety of slopes. Of the current 31 planted blocks, each is managed according to its own unique potential, respecting the natural cycles of the vines. A vineyard program of five hectares per year is being implemented to reach a total of 60 hectares, planting harder rootstocks and new varietal clone selections. Fermented in 10,000 litre open and closed stainless steel tanks with regular pump-overs for two weeks to extract colour and tannins. The wine was then aged for 15 months in second-fill French oak barrels.
