Vinifikation Nom, short for Nombulelo, means gratitude in the indigenous Xhosa language and represents Nomkhubulwane, the African goddess of agriculture. At the very top, 700 meters above sea level, lies the Elandskloof Valley with its shale soils and extreme conditions for viticulture. The Kaaimansgat site enjoys a first-class reputation in SA viticulture. Hand harvest, short cold maceration, 10 months aging in a combination of new (25%) and used 228-liter pièces.
