Vinifikation The grapes always come from the Rondekop vineyards, situated at 200 to 220 meters above sea level. These vineyards are extremely wind-exposed, leading to thick-skinned berries that yield very concentrated juice. The grapes were hand-picked and destemmed but not crushed. The destemmed grapes were chilled to 8°C and cold macerated for 7 days. Fermentation occurred at 25°C, followed by a 35-day post-fermentation maceration on the skins. After malolactic fermentation, the wine was matured for 16 months in 40% new French oak barrels.
