Vinifikation When David and Genevieve Curl purchased an apple orchard in the Elgin Valley in 2010, they immediately planted a 3.12-hectare block of Pinot Noir on a ridge of ancient, clay-rich Bokkeveld shale. Clones 667 and 777 on 101-14 rootstock were selected to exploit the cool climate of the Elgin terroir. The vine density of 6250 vines per hectare encourages fierce competition among the vines, leading to enhanced flavour and concentration in the fruit. The grapes were destemmed and fermented as whole berries, resulting in a soft, pure fruit extraction. The wine was matured in 2000-liter Austrian oak foudres as well as 300-liter Burgundy oak barrels (25% new).
