Vinifikation The Kokerboom vineyard consists of 80% white Semillon and 20% Semillon Gris. They are harvested and pressed together. This wine is one of the richest Eben Sadie produces, with pure volume and massive texture. The Semillon ripens very well in this area due to the high sun exposure. They are harvested in the mountains of Citrusdal, and it is a major logistical effort to transport the grapes to the cellar. The journey from the vineyard takes 4.5 hours, meaning the grapes only arrive at the winery and into the cold room at the end of the day. They are sorted the next morning and pressed over a 3-hour period. The juice is then transferred to old barrels for fermentation. Further aging takes place on the lees for 12 months in old wooden foudres.
