Vinifikation Working closely with growers in Swartland and Stellenbosch to obtain the best possible fruit at optimal ripeness and balance is the most important first step in making Rall wines. Vineyards are selected based on a combination of factors, but the two most important aspects are soil type and vine age. Currently, the fruit for both wines comes from 10 different vineyards, mainly in the Swartland region, with decomposed granite being the main soil type for the white wines. The grapes for the Ava Chenin Blanc come from around Kasteelberg and Riebeeksrivier. Gentle winemaking is only possible when the vines yield little and growth is balanced. This also means that no acidification or addition of yeast or nutrients is necessary in the cellar. The white varietals are pressed as whole bunches in a small basket press and transferred to barrels with minimal settling and SO2. Natural fermentation takes place here, after which the wines mature on their lees for 10 months before being blended and bottled.
