Vinifikation The grapes for this award-winning Chenin Blanc from old bush vines were harvested at optimal ripeness, lightly crushed, and left to rest on the skins overnight. The following day, the juice was transferred to previously used French oak barrels, where the wine completed a natural vinification process exclusively with 'wild' yeasts and then matured on its lees for seven months.
