Vinifikation This 2.4-hectare, 60-year-old plot is located 2 km from the Atlantic Ocean and is one of the coolest and driest sites in Swartland, receiving approximately 300mm of rain per year – yet it is not irrigated. Chenin Blanc and Palomino are grown as a field blend in a 60:40 ratio on the snow-white limestone soil. This stark soil formation and climate shape the wine's mineral-austere character. The grapes are harvested, pressed, and fermented together in two old barrels at the same time. Spontaneous fermentation can last up to 6 months and is only completed in the following spring with malolactic fermentation. The Skerpioen remains on its lees in the barrel for the entire 12 months.
