Vinifikation Our Cuvée Steenberg Lady R is made using the traditional French method of second fermentation in the bottle and is designated Méthode Cap Classique. The grapes were hand-picked at a low sugar content of 18.5 - 19° Oechsle and pressed as whole bunches to extract the juice as gently as possible. Both the Pinot Noir and Chardonnay components were low in phenolics and had high natural acidity. The must fermented with a strong yeast strain to form the MCC base wine. The Pinot Noir base wine has a delicate pale pink color with a subtle strawberry flavor and makes up 63% of the blend. The remaining 37% consists of barrel-fermented Chardonnay – fermentation took place in old 600-liter French oak barrels. Once the base wine is stabilized, it undergoes a second fermentation in the bottle with a crown cap. This second fermentation creates the carbonation (or mousse) of the MCC. After fermentation, the 2019 Lady R spent 50 months on the lees before being disgorged in December 2023.
