Vinifikation It took almost 10 years for this dream to come true, a dream shaped by the realities of farming in the Swartland, its periods of drought, and our love for a specific wine, the Elpidios. Diversity and recognition over time – we share this dream with the Swartland, where in 2017 we first made Grenache the lead grape varietal in Elpidios. Grapes from 12 different vineyards are used, harvested in 16 batches. 30 - 50% whole grape clusters are sorted and then placed at the bottom of an open tank. The remaining grapes are sorted, destemmed, but not crushed, and added to the tank on top of the whole clusters. The 2020 vintage again includes a portion of the wine, the Grenache and the Syrah, fermented in concrete tanks. In addition to the concrete tanks, the wine was vinified in French 500L oak barrels, and the Pinotage in a 4100L foudre. The Elpidios is made similarly to the Grenache, in terms of gentle extraction and the use of whole bunch fermentation. After bottling, the wine matured in bottle for 18 months.
