Vinifikation Exploring the diversity of Syrah grown in the cool microclimates of the Cape is my passion, and this label is another step in my tireless search for the best sites in the Winelands. I work closely with farmers who share my passion for Syrah and precision viticulture. The idea is to provide a snapshot of Cape Syrah in a given year and unite the results in a bottle. In other words: Connect The Dots. This vintage was 100% whole bunch fermented and gently basket-pressed after 10 months in older 300L French oak barrels, before another 12 months of bottle maturation. The blend is made up of three almost equally sized parts, with the Helderberg providing red fruit and florality, underpinned by grippy graphite and structured tannin, whilst the soils of the Elgin parcels show a more luxurious, plum profile. The shale soil brings a slight lavender and peppercorn note, the sandstone a darker, spicier note. Taken together, they show how well Syrah thrives in South Africa's cooler Cape climate.
