Product Description:
Vibrant purple in color with notes of cassis, dark chocolate, lavender and ripe strawberries. On the palate, it is rich, with silky tannins and a framework of dark fruit flavors, blackcurrants, and ripe plums, rounded out with a hint of spice. The finish is lush and rich with a fresh acidity that adds length and good support.

Vinifikation A classic blend, inspired by the wines that came from Simonsberg in the middle of the last century. Classic Bordeaux varieties mingled with Cinsault, as was the norm more than 50 years ago. All grape varieties except for the Cinsault are destemmed and fermented on the skins for 2-3 weeks before being pressed and matured for 12 months in small French oak barrels, 24% of which are new. The Cinsault was fermented as whole bunches and matured in stainless steel tanks. Before bottling in August 2022, the assemblage is made and a light filtration is performed.
