Vinifikation Perdeblokke refers to the horses that worked the soils of the steep vineyard at 200-220m elevation on the slopes of the Constantiaberg, after which it is named. Since planting, the Perdeblokke grapes have consistently produced fruit of the highest quality, giving us a unique Sauvignon Blanc, prompting the decision to produce the maiden vintage of this single vineyard wine in 2005. It is only made in years of exceptional quality. Grapes are harvested from each block in multiple batches, fermented and vinified separately, allowing each block to express its unique style and true terroir. The wine underwent natural fermentation in tank, followed by oak barrels. It was left on its lees for 9 months before blending and bottling.
