The wine has a brilliant, dark ruby red color. A truly magnificent bouquet of black cherries, sweet raspberries and aromatic lavender. On the palate, it is soft and gentle with abundant juicy red berry fruit, sweet licorice and exceptionally fine tannins. The finish is clean, long and persistent.

Vinifikation The Merlot vineyards are planted on Hutton Oak Leaf soils at 200 meters above sea level on the slopes of the Tygerberg, 7 kilometers from the Atlantic Ocean and within sight of it. The vines are between 14 and 17 years old, and an estimated 2,300 vines yield a harvest of 7 to 8 tons per hectare and vintage. The hand-picked fruit was destemmed, crushed, and fermented in stainless steel tanks. The "aerated pump-over method" was used to pump the fermenting juice over the cap four times a day for an hour to extract soft tannins. After fermentation, the wine was pressed, racked, and matured for 13 months in 15% new French oak barrels, 40% second fill, and 25% third fill.
