Vinifikation
The vintage began under ideal conditions: Good winter rains and full dams created a stable foundation for the growing season. This allowed the grapes to ripen more slowly than usual, resulting in particularly even ripening, concentrated aromas, and ripe, elegant fruit tannins. The grapes come from north-facing vineyards aged between 9 and 22 years, grown on decomposed granite soil – a terroir that imparts structure, depth, and mineral tension. Harvesting took place by hand in the cool early morning hours, with an initial meticulous selection already performed in the vineyard. This cuvée unites five noble grape varieties, which were individually harvested at around 24° Balling according to their different ripening times. After a further hand selection in the cellar and destemming, each grape variety was vinified separately. Fermentation on the skins lasted – depending on the variety – between seven and thirty days at 24°C in closed stainless steel tanks. Malolactic fermentation took place in barriques. Subsequently, the wine matured for 18 months in 50% new and 50% used French oak barrels, which adds additional complexity and elegance.
