Vinifikation The vineyards in Elim grow on duplex soils with a high proportion of ferrocrete (coffee stone). The vineyards in Walker Bay are situated on shallow shale, while those in Franschhoek lie on deep, sandy, decomposed sandstone and granite. The cool conditions in Elim lead to a naturally low yield of about 5 tons per hectare. The vineyards in Walker Bay also show low yields due to the dry and windy conditions as well as the shallow shale soils. The Franschhoek Viognier was selected for its late ripening. The Viognier is harvested together with the Shiraz to be co-fermented in a tank. The grapes from the various Shiraz sites were harvested at different times. Viognier grapes were added to some of these tanks. The grapes were hand-picked and subsequently fermented without stems. Regular pump-overs were carried out during fermentation at approximately 25 degrees Celsius. After about 15 days of maceration, the free-run and press wine were combined in 300-liter barrels and matured for 24 months. Bottling took place in June 2022, and 5,000 cases of 6 bottles each were produced.
