Vinifikation The “Green Man” was hand-harvested in the early hours of late January 2023 at 19 Balling. The grapes were whole bunch pressed, with a very low yield of only 500 liters per ton – this ensures that no bitter tannins are extracted. Fermentation took place in stainless steel tanks at 15 degrees Celsius; 15% was barrel fermented and matured to enhance complexity. Secondary fermentation occurred in the bottle, and the wine spent a minimum of 27 months on the lees, after which it was hand riddled and disgorged. Total production – 14,171 bottles (750ml).
