Vinifikation The grapes come from two different vineyards: one is north-facing, while the other has a south-east-facing slope. Each parcel was harvested, destemmed, and hand-sorted separately. Fermentation lasted between 14 and 21 days, depending on the tannin structure, with three pump-overs per day. Once fermentation was complete, the must was pressed, and the wine underwent malolactic fermentation in both oak barrels and tanks. After malolactic fermentation, the wine matured for 22 months in French oak barrels (38% new barrels, 33% second-fill, 20% third-fill, and 9% fourth-fill). Subsequently, the Blue Lady was assembled, naturally clarified, and filtered before bottling in May 2022.
