Vinifikation Crafted using uncomplicated (not simple) winemaking techniques, this is an athletic, chiseled and precise wine. It embraces the very grown-up flavours of salinity, savouriness and minerality, all of which define the great and classic white wines of the world. As is standard practice in the making of Ataraxia Chardonnay, a minimalist, non-interventionist approach to winemaking was embraced, aimed at reflecting the sense of place and the expression of terroir. This wine is 100% barrel fermented and carefully nurtured in specially selected small French oak barriques, sourced exclusively from Burgundian coopers. Fortnightly batonnage was employed during the 10-month maturation period.
