The Pinot Noir has an elegant bouquet of red cherries, crushed strawberries and light menthol aromas. On the palate, it is medium-bodied with smooth tannins, lightly spiced red berry fruits, mixed with dried orange peel and a hint of Szechuan pepper on the finish. Very refined.

Vinifikation This terroir wine from our first vintage of organic grapes, grown at Ataraxia, is the initial result of a five-year transition to organic principles. It forms part of our ongoing search for the soul of the Ataraxia terroir. Traditional Burgundian winemaking techniques, including extended pre-fermentation cold maceration and spontaneous fermentation without additions. The subsequent maturation in specially selected French oak barrels, sourced exclusively from Burgundian coopers, are part of a gentle, minimalist, and non-interventionist approach to winemaking. In doing so, we have crafted a wine that we believe is the most authentic interpretation of our terroir. A terroir that we believe is ideally suited to Pinot Noir. And no other varietal can express the concept of 'earth' better than the King of Grapes. Matured for 11 months in 40% new French oak barriques.
