Vinifikation The grapes were harvested in the early morning hours, cold-macerated for 2 days, pressed as whole bunches, and then fermented in temperature-controlled stainless steel tanks. The wine then matured for several months on the fine lees to increase complexity. Jacaranda works in the most natural way possible to keep the characteristics of the grapes and the terroir alive in the bottle.
