Vinifikation The grapes were hand-harvested in the early morning hours from a single Chenin Blanc vineyard planted in 1978 on the lower slopes of our Simonsberg property. These old, low-yielding bush vines – planted in decomposed granite soils with clay layers – have proven themselves over time, yielding a small harvest of highly concentrated fruit. Upon arrival at the cellar, the grapes were pressed as whole clusters and the juice was naturally clarified. Spontaneous fermentation occurred in 400-liter French oak barrels, 25% of which were second-fill and the remainder neutral. After alcoholic fermentation, malolactic fermentation took place, followed by 9 months of aging in the barrels, which were rolled once a month to stir the lees and protect the wine from unwanted oxygen ingress. A strict selection of barrels was made before blending and bottling.
