Vinifikation The Haute Cabrière Pinot Noir 2007 was matured for 10 months in French Tronçais and Allier oak barrels, 30% of which are new barrels. Achim von Arnim’s philosophy is that the wood should highlight the characteristic aromas of the Pinot Noir grape rather than mask them with too much wood contact. To quote an old Burgundy winemaker: "As in a theatre, the wood must only be the stage on which the wine performs, and not a curtain that obscures the play."
